Good Enough Bread

Good Enough Bread: The historically famous American psychoanalyst Donald Winnicot has a concept called Good Enough Mother. That as a mother, you do a good enough job, even if you're worried about your performance. In connection with my many years of sourdough baking, it occurred to me that I could perhaps use the same concept as inspiration. Often the bread turns out very different to what I was hoping for. Heavier, firmer, less air holes. Eventually, I've come to the conclusion that it must be okay. I'm not a professional baker and I only bake once.In between. It's good enough no matter how it turns out. Sometimes it turns out better than others. And that's okay. Today, for example, it didn't turn out very well. Maybe the leaven wasn't active enough.
