BakeMindfulness: I would like to introduce a new concept in Psychology. Practicing Mindfulness through baking. Let it fill your attention. Concentrate on each different step. It takes many hours. Starting the sourdough for baking. If it has stood for a few days, it needs to be started over as many days before it is active enough for baking. I call it Baking Sourdough and Basic Sourdough. Baking is one of the most beautiful and meaningful hobbies I've ever had. Watching the bread grow in the oven is simply amazing. When you haveIf you succeed in hitting the right point in the sourdough fermentation process, where the rising power is greatest, the bread will rise like a hemisphere. The cut across the bread is important. I've been wondering for many years how to make it. The razor blade should be horizontal and you should cut slightly off the center line. Then you can get the famous "ear", an edge that stands up over the bread.
It's mesmerizing to sit and watch it in the oven. Watching the crust develop. The gluten strands across the bread, stretching out. If you're lucky, there are more of them inside the bread.
You want to take it out when it turns brown, but inspired by Claus Meyer, you should wait until small dark brown blisters form. This is when the sugars in the crust caramelize and the taste becomes richer. It requires your full attention. Pure mindfulness.
